Here is a delicious and super simple St. Patty’s Day Recipe for you to enjoy with the family. These Thin Mint Marshmallow Cookies are the perfect minty treat for all my mint chocolate lovers out there. Check it out below.

PREP TIME: 5 minutes
YIELDS: 8 cookie sandwiches
INGREDIENTS:
- 6 Jet-Puffed Jumbo Marshmallows
- Green Food Color
- 16 Girl Scout Thin Mints Cookies
- 1tbsp of Honey
- Cooking Spray (optional)
INSTRUCTIONS:
Place 6 marshmallows into a microwave-safe bowl
Add 1tbsp honey to the bowl of marshmallows and warm for approximately 30 seconds. *Watch over marshmallows to make sure they are not burning or growing over the bowl.*
Promptly remove marshmallows from microwave once done, and begin stirring with spatula. You can coat spatula with cooking spray to help prevent sticking. Stir until smooth. *Marshmallows will begin to stiffen pretty quick.*
Add 3 drops of green food dye to marshmallows and stir until properly blended.
Place a spoonful of marshmallow fluff onto one side of each cookie.
Sandwich together with another cookie.
Enjoy!
