These Mint Chip Ice Cream Sandwiches were a huge hit in our household! This recipe is not only really easy to make, but extra yummy as well. Check it out below.

PREP TIME: 20 minutes
BAKE TIME: 23 minutes (13 x 9 inch pan)
YIELDS: 5 sandwiches
INGREDIENTS:
- Mint Chocolate Chip Ice Cream
- Duncan Hines Brownie Mix, Dark Chocolate Fudge
- 1 Large egg
- 1/3 cup water
- 1/2 cup vegetable oil
INSTRUCTIONS:
Preheat oven to 350°F and grease bottom of pan
In a large bowl, add brownie mix, egg, water, and oil
Mix the ingredients until well-blended
Spread the mix into greased pan, and bake in the center of oven for about 23 minutes.
Stick a toothpick in brownie to determine whether it is finished. Brownie is finished baking if toothpick comes out clean.
Let cool for about 10 minutes.
Once brownie is completely cooled, cut into 10 rectangular (or square, if you prefer) sections.
Spread ice cream onto 1 side of 5 of the brownies, then sandwich together with a brownie that is not coated in ice cream.
